- You will need:
- 2 Medium Onions
- 300g Red Lentils
- 2 400g Tins of Chopped Tomatoes
- 1Tbsp Tomato Puree
- Juice od Half a Lemon
- Seasonal Herbs
Chop and fry 2 medium onions in oil until soft.
Add 300g red lentils, coat in oil. A
dd 2 pints veg stock, followed by 2 cans chopped tomatoes and tomato purée.
Simmer for 20 mins.
Add juice of half a lemon. Season to taste.
Add whatever herbs you like.
