- You will need:
- 1 Onion
- 1 Chorizo Ring
- 1 Red Pepper
- 2 Tins of Chopped Tomatoes
- 2 Tins of Chickpeas (drained)
Chop an onion and soften in oil for a couple of minutes.
Peel a chorizo ring, cut into discs and halve them. Add them to the pan with the onions, and cook for a couple more minutes.
De-seed a red pepper and cut into approx. 1cm chunks. Add to the pan along with 2 tins of chopped tomatoes and 2 tins of drained chickpeas.
Simmer for 20 minutes.
This will serve 4 generously, I freeze batches and also halve the quantity. Good with a baked spud, or just on it’s own. Very tasty.
