- You will need:
- 2 large courgettes
- 1 red onion
- 4 ripe tomatoes
- 1 red
- 1 yellow pepper
- 2 garlic cloves
- 1 tbsp tomato purée
- 2 tbsp red or white wine vinegar
- 2 tbsp olive oil
- lemon juice
This is really good, plus as it’s seasonal, it’s cheap – just £3 to make this.
Roughly chop into chunks, 2 large courgettes, 1 red onion, 4 ripe tomatoes, 1 red and 1 yellow pepper. Thinly slice 2 garlic cloves.
Toss with 1 tbsp tomato purée and 2 tbsp red or white wine vinegar. Put in an ovenproof dish, cover with foil and bake at 190 for about 30 mins.
Remove and cover with breadcrumbs which have been mixed with 2 tbsp olive oil and a squeeze of lemon juice.
Return to the oven for 10 minutes.
